Asian style buddha bowl

Bean noodles with roasted chickpeas, sesame style salad and satay sauce that gets you addicted
 
Serves 18 people - Bring your friends over and share some healthy plant-based goodness with them 😃

 

Bean noodles

  • 500 grams bean noodles
  • Water

 Process:

  • Boil the water and add the noodles giving it a boil for a minute or two
  • Try it to make sure its good consistency
  • Strain the noodle and rinse it with colder water right away to make sure they don’t sticks together


Roasted chickpeas

  • 12 cups boiled chickpeas
  • 3 tbsp sesame oil
  • 4 tbsp cumin
  • 2 tbsp coriander powder
  • 2 tbsp paprika
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 4 tbsp sesame seeds
  • 1 tsp chili powder
  • Salt & Pepper to taste

 Process:

  • Soak chickpeas overnight and boil to a good firm consistence
  • Roast them in the pan with the spices and sesame oil
  • Add a little bit over water at the time until the spices are melted as a layer around the chickpeas
  • Let it dry up before serving

 

Sesame salad

  • Thinly sliced cabbage
  • Carrots
  • Cucumber
  • Broccoli
  • Sugar snaps
  • Wild harvest of the day
  • Chives or leek finely chopped
  • Fresh mint and coriander leaves

Seasoning

  • Toasted sesame and sunflower seeds
  • Salted toasted peanuts
  • Coldpressed sesame oil
  • Freshly squeezed lemon juice
  • Salt & Pepper to tase

 

Satay Sauce

  • 2 cups peanut butter
  • 1/2 - 1 cup boiling water
  • 2 garlic cloves – very finely chopped
  • 2 cm ginger – very finely chopped
  • 2 tsp apple cider vinegar
  • 1 dash fresh lemon/lime juice
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1/2 tsp chili flakes
  • 2 tbsp spruce sirup (or maple sirup or any other desired sweetner)
  • 10 +++ tbsp soya sauce (gluten free if needed)
  • Fresh Coriander – finely chopped

Process

  • Start by mixing peanut butter and hot water (add little water at a time until desired thickness, the hot water will in the beginning make the peanut butter thicker)
  • Mix in the rest of the ingredients
